Paleo Brownies

These simple, easy, nutritious and delicious almond flour Paleo Brownies are perfect for the whole family.

This recipe takes no more than 10 mins to mix up and approximately 20 mins in the oven. Whip up a batch and enjoy as mid-morning or afternoon snack.

Full of healthy fats and protein like eggs, grass fed butter and almonds, this treat/snack will help keep you full, nourished and satisfied!

INGREDIENTS

1 ½ cups almond flour
½ cup tapioca flour
¼ cup cacao powder
1 tsp Madagascan vanilla powder
2 eggs
50g softened grass fed butter
1 tsp vanilla extract
½ cup coconut sugar
¼ tsp baking powder
¼ tsp baking soda
1/3 chocolate chips

METHOD

Preheat oven to 180ºc.

In a bowl, mix together the almond flour, tapioca starch, cacao powder and vanilla powder. Set aside.

In a separate and slightly larger bowl add the 2 eggs, butter, vanilla extract, coconut sugar. Whisk for about 2 mins until all the ingredients are well incorporated.

Gently add the dry mixture to the wet mixture and mix well with a spatula.

Next add the baking soda and baking powder and mix.

Fold in the chocolate chips, and then pour the batter into a lined 9 x 9 square pan. Make sure to fill the corners in evenly.

Bake for approx. 20 minutes or until cooked through. Let it cool before lifting it onto a chopping board and cutting into squares.

SUGGESTIONS

If you want to make this vegan, you could substitute the eggs for a chia gel and replace the butter with coconut oil.
